American grocery stores sell roasted, salted, honey-coated peanuts. What they almost never sell is plain raw jumbo peanuts — and that is exactly what Indian cooking runs on.

Raw moongphali is a top-five seller in every Indian store because it crosses every region: Maharashtrian poha, South Indian chutney, Gujarati chikki, North Indian sabzi, and every upvas thali during Navratri.

Raw is the whole point

You control the roast. Fifteen minutes in a dry kadhai on medium heat gives you the deep nutty flavor that pre-roasted supermarket peanuts have already lost sitting in a warehouse.

You also control the salt. Chikki, laddoo, and chutney all fail if the peanut is already salted.

  • Cool completely before crushing or the powder turns pasty.
  • Freeze what you won't use in three months; peanut oil goes rancid faster than people expect.

Can I use supermarket roasted peanuts instead?

For a topping in a pinch, yes. For chutney, chikki, or vrat food, no — the salt and oil coating changes the result.

Are these the same as the peanuts used for peanut butter?

Similar variety, but jumbo raw peanuts are graded larger and cleaner, which is why they hold up to roasting and crushing.
