If your Indian food tastes flat, it's usually the jeera — old, ground, or missing.

Nearly every Indian dish starts the same way: hot fat, then jeera. That one second of crackle is the difference between food that tastes Indian and food that tastes like it is trying.
Whole cumin outsells ground cumin by a wide margin in Indian stores, and it should — ground jeera loses its oils in weeks, whole jeera holds for a year.
How to judge cumin at the shelf
Good jeera is slim, ridged, greenish-brown, and smells sharp through the bag. Dull grey seeds with a dusty smell are old.
Rub a few seeds between your palms. If the smell doesn't jump at you, put the bag back.
Tadka technique nobody teaches
Fat must be hot enough that the first seed sizzles immediately, but not smoking. Count three to five seconds after the crackle starts, then add your next ingredient.
Burnt jeera turns bitter and there is no fixing it. When in doubt, pull the pan off the heat.
Roast and grind your own
Dry roast a cup, cool it, grind it, keep it in a small jar. Homemade bhuna jeera powder over raita, chaas, and chaat is a completely different ingredient from store-bought cumin powder.

Is jeera the same as caraway (shahi jeera)?
No. Shahi jeera is darker, thinner and more floral, used in biryani and Mughlai food. Regular jeera is the everyday tadka spice.
How long does whole cumin stay good?
About a year in an airtight jar away from light and heat. Ground cumin is closer to three months.
