Ching's Secret Dark Soy Sauce

Dark vs light soy — actually different
Dark soy is thicker, less salty, and slightly sweet from longer fermentation and added molasses. It exists to give color and depth.
Light soy is what you season with. Most desi Chinese recipes want a little dark for color plus salt from elsewhere — chilli sauce, green chilli sauce, or vinegar-salt.
The three dishes worth learning
Hakka noodles: high heat, thin-sliced cabbage, carrot, capsicum, spring onion, a spoon of dark soy, a spoon of vinegar, white pepper.
Gobi manchurian: cornflour-battered cauliflower, then a sauce of garlic, ginger, green chilli, dark soy, ketchup, and a cornflour slurry.
Chilli paneer, which is the same sauce with paneer and less shame about the amount of garlic.
