Canned chickpeas make a fine salad. They do not make chole. The texture is wrong, the flavor is thin, and the gravy never clings.

Dried kabuli chana, soaked overnight, is one of the highest-volume items in Indian stores because Sunday chole is a ritual, not a recipe.

The overnight soak is non-negotiable

Eight hours in plenty of water with a pinch of baking soda. The beans should nearly double.

Pressure cook with salt, a tea bag or two dried amla pieces for that dark restaurant color, and a bay leaf.

Getting the gravy right

Onion-tomato base cooked until the oil separates — this step cannot be rushed, and most home chole fails here.

Anardana or amchur at the end for sourness, garam masala off the heat, and a handful of the cooking liquid to loosen it.

Other uses in one bag

Hummus, chana chaat, chole tikki, and roasted chana snack. Very few items in the pantry earn their space this hard.

  • Old chickpeas never soften. Buy from a store with turnover, not a bag that's been sitting two years.
  • Save the cooking liquid — it's the best thing to thin the gravy with.
  • A crushed dried amla or two black tea bags gives the deep brown color without any coloring agent.

Kabuli is the large cream-colored chickpea for chole. Kala chana is the small dark one, earthier, used for sundal and dry sabzi.

Can I skip soaking with an Instant Pot?

You can cook unsoaked in about 45 minutes, but the texture is chalkier. Soaking is still better.
