Most American cooks think bay leaf is bay leaf. It isn't. Tej patta, the Indian bay leaf, comes from the cassia tree and has a warm, cinnamon-clove aroma completely different from the mild laurel leaf sold in Western supermarkets.

It's a small item, but it's in nearly every whole spice tempering for biryani, pulao, and rich curries, which is why we keep it stocked alongside cumin and cardamom rather than treating it as an afterthought.

Why the American bay leaf won't do

Laurel bay leaf (the common Western kind) is subtler and more herbal. Tej patta carries a distinct cinnamon-like warmth that's part of the flavor signature in biryani and garam masala-based curries.

Using laurel bay leaf instead won't ruin a dish, but the aroma profile will be noticeably flatter than what the recipe intended.

Where it goes

It's part of the classic whole-spice tadka along with cinnamon, cloves, and green cardamom used at the start of biryani, pulao, and many North Indian gravies.

It's also one of the ingredients in homemade garam masala blends, contributing background warmth rather than a dominant flavor.

Buying and storage

Good tej patta is a dull olive-green to brownish-green, brittle, and gives off a warm, slightly sweet smell when crushed.

Buy small amounts at a time — like most leafy whole spices, it loses aroma faster than seeds or bark spices do.
