If jeera is the crackle, dhania is the body. Whole coriander seeds go into everything from panch phoron to sambar powder to the everyday dhania-jeera powder mix that sits in most Indian kitchens.

It's used in bigger volumes than almost any other whole spice because it's the bulk ingredient in homemade masala blends, not just a garnish spice.

Whole vs powder — why it matters here

Pre-ground dhania powder loses its citrusy top notes within weeks. Whole seeds hold their aroma for a year or more, which is why serious home cooks buy whole and grind small batches.

Look for round, pale tan seeds with a faint ridge pattern and a lemony smell when crushed between fingers.

The classic dhania-jeera powder

Dry roast coriander and cumin seeds separately (coriander needs slightly longer) until they smell toasted, cool completely, then grind together in a 3:1 ratio.

This is the base seasoning for dry sabzis, curries, and the tempering used in dals across North India.

Where else it shows up

Panch phoron for Bengali cooking, sambar powder for South Indian, and pickling spice blends for achaar all lean heavily on whole coriander.

It's also chewed plain in small amounts as a digestive after meals in many households.

Can I skip roasting before grinding?
