Priya — the South Indian classic

Priya ka Andhra-style avakaya (mango pickle) legendary hai. Spicy, oily, mustard-heavy — bilkul homemade jaisi taste. Priya Gongura (sorrel leaves) aur lemon pickle bhi top-notch hain.

Warning: Priya achaar tez hai. First-time eaters ko chhota portion do.

Mother's Recipe — the balanced middle ground

North Indian style — Punjabi mango pickle, mixed pickle, aam ka meetha achaar. Less oil than Priya, balanced spice. Kids ke liye aur mixed households ke liye zyaada suitable.

Mother's Recipe garlic pickle underrated hai — dal-chawal ke saath game changer.

Patak's — the export champion

Patak's UK-based hai, Indian roots. Milder flavor, thicker consistency. American palate ke liye entry-level friendly. Lime pickle aur brinjal pickle popular hain.

Traditional Indian palate ke liye Patak's thoda phika lag sakta hai, but sandwich ya wrap mein Patak's actually better hai kyunki mess less karta hai.

Which achaar goes with what?

Dal-chawal — Priya avakaya ya Mother's mango.

Roti-sabzi — Mother's mixed pickle ya Punjabi lasun (garlic).

Curd rice — Priya lime ya gongura.

Paratha breakfast — Mother's stuffed mango ya nimbu ka meetha.

Sandwich/wrap — Patak's lime pickle.

Homemade vs store-bought

Mummy ka homemade achaar irreplaceable hai — yeh sab jaante hain. Par Wisconsin mein sunlight-based traditional achaar banana muskil hai (proper 15–20 din ki dhoop chahiye). Isliye zyaadatar Fox Valley families store-bought pe rely karti hain, aur occasional summer batch ghar pe try karti hain.
