Toor dal (arhar) — the everyday hero

Yellow split pigeon peas. Yeh sabse zyaada consume hone wali dal hai Indian ghar mein. Gujarati dal, sambhar, dal tadka — sab toor se banti hai.

Buying tip: Oiled toor dal (thoda chikna dikhta hai) longer shelf life ka hota hai but ek baar dhona zaroori hai. Unoiled fresher taste deta hai. Brands: Swad, Deep, Laxmi — teenon acche hain.

Moong dal — light, fast, healing

Yellow split moong (dhuli moong) sabse easy digest hoti hai. Bimar ho, kuch light chahiye — moong khichdi bana lo. 20 minute mein ready.

Green whole moong bhi rakho — sprouted moong salads ke liye, ya moong dal cheela breakfast ke liye. Moong dal chilla batter fridge mein 2 din chalta hai.

Urad dal — the flavor bomb

Black urad (sabut) makes Punjabi dal makhani — overnight soak + slow cook + butter + cream = restaurant magic. Split urad (dhuli) South Indian dosa/idli batter mein.

Ek warning — urad heavy hai. Raat mein zyaada mat khao, warna next day heavy feel hoga.

Chana dal aur kala chana

Chana dal (split Bengal gram) is used for dal, tadka, and grinding into besan-like consistency for vadas. Kala chana (whole) Sunday chole banane ke liye — Wisconsin cold winters mein perfect protein-heavy meal.

Kabuli chana (white chickpeas) alag hai — chole/chana masala ke liye. Overnight soak mandatory, warna pressure cooker mein 25 minute lagenge.

Masoor dal — the beginner's best friend

Pink/red masoor sabse fast pakti hai — 12 minute mein ready without pressure cooker. New cooks ke liye ideal. Slightly sweet flavor, tadka daal ke aur cilantro se garnish karo.

Whole masoor (brown) bhi try karo — earthier taste, thoda longer cook time.

How much to stock at home?

4-person family ke liye monthly: 2 lb toor, 1 lb moong (yellow), 1 lb urad (split), 1 lb chana dal, 1 lb masoor, plus 1 lb kala chana aur 2 lb kabuli chana. Yeh bag pantry rack mein 2–3 mahine chal jata hai.

Bulk buying (4 lb+ bags) sasta padta hai per pound, but airtight jars mein rakho warna weevils aa jate hain — Wisconsin humidity summer mein ho jaati hai.
