Ching's Secret Veg Hakka Noodles
The noodle base that turns a fifteen-minute stir-fry into Friday night takeout at home.

Hakka noodles need the right noodle to start with — thin, quick-cooking, sturdy enough to survive a hot wok toss without turning to mush. Ching's Secret noodles are built for exactly that job, which is why they pair so naturally with the dark soy sauce sitting a shelf over.
It's one half of the desi Chinese pairing that shows up on weeknight tables across the Fox Valley's Indian households, especially once teenagers get old enough to cook for themselves.
Why not regular spaghetti or ramen
Hakka noodles are thinner and cook faster than spaghetti, and they don't have the seasoning packet or curl of instant ramen — they're a blank, quick-cooking canvas built specifically for stir-frying.
Boiling them slightly under, then finishing in the hot wok with vegetables and sauce, is what keeps them from turning gummy — a mistake most first-timers make by fully boiling them first.
The basic method
Boil noodles until just short of done, rinse in cold water to stop cooking and remove excess starch, then toss aside with a little oil so they don't stick.
Stir-fry thin-cut cabbage, carrot, capsicum, and spring onion on high heat, add the noodles, a splash of dark soy sauce, vinegar, and white pepper, toss hard for two minutes.
Why we're stocking it alongside the soy sauce
Desi Chinese ingredients sell in pairs — noodles need sauce, sauce needs noodles. Stocking both together from day one means nobody has to make two trips to finish one dinner.
Ravi's quick tips
- •Undercook the noodles slightly in boiling water — they finish cooking in the wok.
- •Rinse boiled noodles in cold water immediately to stop the cooking and prevent clumping.
- •Use the highest heat your stove allows — desi Chinese depends on char, not gentle simmering.
- •Toss noodles with a teaspoon of oil after rinsing so they don't stick together while you prep vegetables.
Frequently asked
Can I use regular spaghetti instead of Hakka noodles?
You can in a pinch, but the texture and cook time are different — Hakka noodles are thinner and specifically built for quick stir-frying.
Are Ching's Veg Hakka Noodles pre-seasoned?
No, they're plain noodles meant to be seasoned during stir-frying with sauces like Ching's dark soy sauce and vinegar.
How long do they take to cook?
Typically three to four minutes at a rolling boil, slightly less than the package suggests since they finish cooking in the wok.
Will Fox Valley Bazaar stock Hakka noodles?
Yes, alongside Ching's sauces, as part of our instant and ready-to-cook lineup at launch.
