Chai patti matters most
Yellow-label American 'chai tea bags' bilkul mat use karo. Woh masala chai nahi hai. Aapko chahiye CTC (crush-tear-curl) black tea — strong, granular, dark brew.

Wisconsin milk — actually perfect for chai
Ek accha secret — Wisconsin ka local whole milk (Kwik Trip, Woodman's ka store brand, Organic Valley) India ke doodh se richer hai. Fat content higher, aur pasteurization gentle hai.
Toh ratio thoda adjust karna padta hai: 60% milk, 40% water — India mein ulta karte hain, but yahaan milk itna rich hai ki 50-50 bhi already creamy taste karta hai.
Fresh masala — kootke daalo, powder nahi
Har cup ke liye: 2 green elaichi (crushed), 1 clove, ek chhoti chutki dalchini (cinnamon stick, powder nahi), aur fresh adrak (ginger) — thumbnail size piece grated.
Sardi mein extra warmth ke liye 1 kaali mirch (black peppercorn) bhi crush karke daalo. Kadak chai ready.
The actual method (2 cups)
Pot mein 1.5 cup paani, adrak, aur masala daalo. 2–3 minute full boil karo — spices ka flavor paani mein aana chahiye.
Ab 2 heaped teaspoons CTC chai patti daalo. 1 minute aur boil. Phir 1.5 cup whole milk add karo. Flame medium karo. Chai jab upar tak aaye, gas kum kar do — spillover se bachana. Yeh 2–3 baar repeat karo (jise 'chai ubalna' kehte hain). Yehi thickness aur color deta hai.
Cheeni taste ke hisaab se — usually 1.5 tsp per cup traditional. Strain karke garam-garam serve karo Parle-G ya Marie biscuit ke saath.
