What makes basmati 'basmati'
True basmati grows in specific regions of India and Pakistan — Punjab, Haryana, western UP. Long slender grain, distinctive aroma (from a compound called 2-acetyl-1-pyrroline), aur pakne ke baad grain double se zyaada elongate hota hai without breaking.
'Basmati-style' California-grown rice basmati nahi hai. Package check karo — 'aged basmati rice, product of India/Pakistan' likha hona chahiye.
Aging matters — 1 year minimum
Fresh-harvest basmati sticky ban jaata hai. Properly aged basmati (1–2 saal purana) dry, non-sticky, aur aromatic hota hai. Premium brands 'aged' ya 'matured' clearly likhte hain.
