Fresh mangoes flown into the Midwest are picked early and ripen inconsistently — sometimes fibrous, sometimes bland. Kesar pulp is canned at peak ripeness in India, so the sweetness and color are consistent every single time.

What to make with one can

Aamras: pulp whisked with a little milk, ghee, and cardamom, served with hot puris — a five-minute Gujarati summer classic.

Storage and shelf life

Unopened, it's a genuine pantry staple with a long shelf life — buy two or three cans when you see them so you're never caught without one for a last-minute dessert.

Once opened, transfer to a glass container and refrigerate; it keeps about a week and freezes well in ice cube trays for smoothies later.
