Chana dal is the dal with a spine. It holds its shape, it tastes nutty, and it does jobs no other lentil can — thickening a chutney, crunching in a tadka, sweetening into puran poli.
It also lands high on every best-seller list because South Indian, Bengali, Maharashtrian and Punjabi kitchens all reach for it, just in totally different ways.
Soak it, seriously
Thirty minutes minimum, an hour is better. Unsoaked chana dal takes forever and cooks unevenly.
Pressure cook four to five whistles for dal; three if you want it firm enough for a dry sabzi like chana dal with lauki.
Its three separate careers
As a dal: chana dal tadka with ginger, tomato and a heavy ghee tempering.
As a spice: a teaspoon fried in the tadka for coconut chutney, sambar, and South Indian poriyals gives that toasted crunch.
As a sweet: boiled, sweetened with jaggery, ground into puran for puran poli or Bengali payesh.
Storage
Chana dal is dense and keeps well, but it attracts pantry moths in warm months. Airtight jar, cool cabinet, done.

Frequently asked
Is chana dal the same as split chickpeas?
It's split desi chickpea (kala chana), which is smaller and nuttier than the large kabuli chickpea. Not interchangeable in texture.
Why is my chana dal still hard after pressure cooking?
Either old stock or unsoaked. Old dal can take twice as long — one more reason fresh local stock matters.
